Something Belgian This Way Comes...



Banana-Almond Belgian Waffles
Gluten/Dairy/Corn/Pork- FREE
Step 1: Make or purchase Gluten-free pancake mix
(any recipe or brand will do - I use Bob's Red Mill Gluten-free Pancake Mix)

Step 2: (Directions for Bobs Red Mill Gluten-free pancakes)
Add about 3/4c - 1 1/2c pancake mix to a mixing bowl or cup

Step 3: Add 1-2T oil (grapeseed, olive or anything you prefer)

Step 4: Add 1 c Milk (Almond, soy, rice or what you prefer)
Step 5: Add 1 large egg 

Step 6: Flavor tip: add 1/2 - 3/4 of a banana and sliced almonds

Step 7&8:  Blend ingredients with electric mixer, whisk or fork until consistency is smooth and not too thick (add water if needed).  Pour 2.5 oz of batter (ish) onto waffle maker.  Wait 4-6 minutes and remove (according to your waffle maker's instructions). 

Step 9: In a separate stove pan, cook Little Smokies' Beef Sausage!! (Pork substitute and they taste the same!)

Step 10: Add strawberries (or any fruit choice) and top with Maple Agave!

Kinnikinnick

...KiNnIkInNiCk...

Kinnikinnick is a Gluten/Wheat-free Brand of food, mainly baked goods.  

I have tried many different brands, including the popular Udi's. I have concluded that based on texture and flavor, Kinnikinnick is the most ideal.  The product does not taste like Gluten-free foods usually do.  They are chewy like wheat, sweet like bread and if you did not read the container you would not know the difference (unlike most gluten-free brands)
English Muffins

Cinnamon Rolls

Pie Crusts

Donuts (Vanilla, Maple or Cinnamon/Sugar - Maple tastes like maple bars!!)

Pizza Crusts

You can find these things at stores such as Huckleberry's, Fred Meyer and Yoke's.

Gluten-free Corn Bread




Ingredients:
Bob's Red Mill Gluten-free Corn Bread mix
2 Eggs
1/3 c Oil or melted butter
1 1/2 c Milk

Directions:
Step 1: Preheat oven to 375 degrees
Step 2: Mix ingredients
Step 3: Grease 9' x 9' pan
Step 4: Bake 25 min or until golden brown


Step 5: Add butter and honey to your liking!

Egg Sandwich w/ Avocado and Swiss

Jacklyn's Special Egg Sammy Recipe

Ingredients:
1 Egg
1 Slice Black Pepper Canadian Bacon
1 Slice Roast Turkey 
1 Slice SoySation Swiss-style Cheese
1/4 Avocado, Sliced
Gluten-free Bread
Salt and Pepper
Italian Seasoning



Step 1a: Fry egg (to your liking)
Step 1b: Lightly salt and pepper egg, also sprinkling Italian seasoning



Step 2: Place meat on one side of sandwich 


Step 3: Place cheese on other side of sandwich
Place egg in middle


Step 4: Toast both sides of the sandwich


Step 5: Slice avocado and place on top of cheese
Replace bread slice


Serve with iced Mango Nectar!

Gluten/Dairy Free PIZZA!!

PIZZA TIME!!!
Wait, what? You can still eat pizza? Yes, you can!  I figured out how and it tastes the same!!

Recipe is easy to make and yummy to eat! 


For this WONDEROUS Recipe you will need...
Udi's Gluten-free Pizza Crusts (or other Gluten-free options)
Pizza Sauce (I chose to try organic, it was AMAZING)
SoySation's Mozzerella-style Cheese (shredded)
Canadian Bacon (cut into pieces)
(Italian Seasoning is optional)


Steps 1 & 2: Sauce one crust to your liking and then evenly spread the soy mozzarella 


Step 3: Top with Canadian Bacon
Step 4: Bake at 375 degrees in oven for 7-9 minutes (until cheese is sufficiently melted)


Step 5: EAT!!! Yum!

Jacklyn's 8-layer Gluten/Dairy-Free Bean Dip

8-layer Bean Dip minus the Lactose and already Wheat-free!

Ingredients...
1/2 can refried beans
Medium Taco Sauce or Salsa
Guacomole (purchased or made)
Soy Cheese Shreds 
1 medium tomato sliced
1 small can sliced olives
Sliced green onions
Chopped cilantro

Layer 1: Refried Beans
Layer 2: Taco sauce/salsa
Layer 3: Guacomole (as much as you desire or have)
Layer 4: Sprinkled soy cheese (shredded)

Layer 5: Olive slices

Layer 6: Chopped Green Onions

Layer 7: Diced Tomato

Layer 8: Chopped Cilantro

BON APPETIT!!! 
(best served with corn/tortilla chips)

Dairy-free, Gluten-free and it's TACOS!!


GOOD OL' TACOS
Tacos, the original taco is both gluten-free and dairy-free. Cheap to purchase, easy to make, healthy to eat!!


1lb Ground Beef
3 chopped Green Onions
1 chopped Tomato
1/4 c chopped Cilantro
Guacomole (homemade or store bought)
Soy Sations' Soy Shreds (cheese)
Any taco seasoning (to be added to beef)
Whole grain corn Taco Shells
