I still want my breakfast!


What about breakfast??
Pork/Lactose/Gluten Free Hash browns, scrambled eggs and sausage.


I really like breakfast.  I was told I needed to go off of pork, cheese and wheat (to name a few) and I was devastated.  However I can still have my dreamy breakfast.
What I need?  
4 Eggs
1/2 c Chopped Green Onion
1/2 Chopped tomato
1 Med red potato
1/2 small white onion
Red&Green Peppers, sliced
Garlic Chicken Sausage
Basil, Salt, Pepper, Garlic Salt, Italian Seasoning, Basil
Butter
Soy/Rice Cheese Shreds

Chop up Onion, Peppers, Potato into thin slices and place in pan to saute in oil (I used Grapeseed Oil - much healthier, any works) Onions will be translucent and potatoes will be soft and crisp.  After a few minutes add salt, pepper, garlic salt and basil to taste.


Whisk eggs in a bowl with garlic salt and Italian seasonings. Mix in butter together with egg mixture in a pan and scramble.  (Butter makes eggs fluffier and non-stick).  Top finished eggs with soy or rice cheese shreds and freshly chopped tomatoes and green onions.


Cook Sausage until well done but moist on the inside.

Serves 2-3
And Yes I made this recipe myself!  Naturally gluten-free as well as pork-free and lactose-free!

Pets can have food allergies?


What about our pets?


My kitten Sam (now 7 mo, then 3 mo) was in vet hospital 2x this past year for inflamed intestines. After much experimentation, medications and doctor visits/phone calls it was realized that she was allergic to grain&gluten. Most cat foods are made with some type of grain product, not just wheat but rice or oat just to name a couple. Some cats, like us, have negative digestive reactions to either gluten or grain. Little Sambo is allergic. Luckily Simply Nourish located at Petsmart has a Gluten&Grain free cat food with Sweet Potato & Salmon. It is important to know that even prescription cat foods structured for feline digestive issues are made with grains. Not all digestive issues are resultant of a grain allergy. However in my case the prescription cat food was useless. Only when I went on a grain free diet did Sam improve. Interesting. Thought I would share.

Why Wheat??

What is Wheat? What is Gluten? Why wheat? Why Gluten? 
Gluten is a connector in Wheat flour. Wheat is the most commonly used flour in most grocery bread & grain products. Gluten was not meant to be easily digestible. Like other connecters such as Xanthum Gum, Gluten is used to conncet the flour together during the baking process allowing it to become chewy, moist and of a softer consistency upon eating. While it tastes good, these "connectors" get stuck in our stomachs and do not go down well.

Is there anything other than Wheat??
There are numerous grains outside of the oh so popular gluten-full Wheat flour.
-Brown Rice
-White Rice
-Quinoa
-Oat
-Amarynth
-Flax
-Tapioca
(Just to name a few)

Also there are Grain-Free flours!
-Almond
-Coconut
-Garbanzo (Bean)
(Just to name a few)
